We are lucky to have nabbed this tiny tiny lot which is a one-off experiment by farmer Isaias Fernandez. Isaias typically produces extremely clean fully washed coffee across his 9 hectare farm in the Las Flores area of Honduras. This lot is a version of honey processing, where instead of completely removing the coffee seed from its cherry, Isaias left some mucilage and fruit on the seeds while drying. This isn't quite as fruity / bomb-like as a full dry processed coffee, but it definitely applies a different dimension to the result upon tasting similar varietals from this season grown on his farm. It's elegant, delicious and extremely rare!
